This simple vegan burger patty will help you satiate your burger cravings at home.
To come up with this I referred to a few notes I had taken while I was on my backpack trip. I have made tweaks to add some spice so that the flavours suit the Indian palate.
I am using simple ingredients that are nutritious and rich in flavour. Beetroot is hands down one of the most underrated veggies but it is amazingly sweet and binds together well.
Quinoa might not be the easiest ingredients to find or to have at the moment but it fits so well here that I do not want to change it.
I have added the sunflower seeds to give the whole thing a new texture of crunch.
Patty ingredients
- 1/3 cup quinoa
- 1 or 2 large beetroot peeled and grated
- 6-7 mushrooms
- 20-25 sunflower seeds (optional)
- 1/2 teaspoon dill
- 2 teaspoon mustard sauce
- 1/2 cup buckwheat flour
- Salt to taste
- 1 teaspoon fennel seeds
- 1 large onion finely chopped
- 4-5 cloves of garlic
- Olive oil
- 1 or 2 green chillies (optional)
- 2 tomatoes sliced round
- Romaine leaves/ lettuce
- Burger buns
- Pepper to taste
Method
- Clean the quinoa well and boil it with 3 times water. Once done cover the quinoa and set it aside.
- On a dry skillet heat the sunflower seeds and cook till the seeds turn golden/brown
- Heat the pan and add some olive oil. Once hot add fennel, garlic, onions and chillies. Add mushrooms once the onions caramelise. Remove from pan and let it cool
- Mix all of the ingredients and make a patty
- Heat olive oil in a skillet in a large pan on low flame and add the patties to it and cook till the patty becomes golden brown on one side. Will take about 10-12 minutes per side. You can also cook the sides of the patty to cook it evenly
- Remove and serve hot with burger buns, lettuce/romaine leaves, tomatoes and some mayonnaise
NOTE: To enhance the flavour of the burger make some onion jam – and add it to the construction of the burger. It completes the burger, it is easy and simply a 7-8 minute long recipe. Click here for the recipe.
